SOILS

The Nivarius soils are formed by a superficial layer of sand with a thickness of 30-50 cm over a subsoil of fragmented limestone, 2 metres deep, that was formed in the Cretaceous period. It is a basic soil (pH>8), with an excellent structure, porosity and drainage, considered in Burgundy and other prestigious winegrowing areas as the perfect soil for the production of great wines.

CLIMATE

Mediterranean with Atlantic influence.

VINEYARDS

Our vineyards are located at an altitude of 800 metres, north-facing, at Nalda. This situation allows to keep the natural acidity of the grapes. The result is wines with good tension, that express the terroir from which they come from and with an exceptional ageing potential.

ELABORATION NOTES

Manual harvest in boxes of 18 kg, each variety individually. Respectful pressing at a low temperature. Fermentation in French oak casks of 35 hl with native yeast. Ageing in lees in those casks for 10 months with regular battonages. The wine stays 9 months in bottle before release.

TASTING NOTES

Clean, brilliant and transparent, with a straw yellow colour with green glints. On rose it is fresh, complex and mineral, with aromas of white fruit, flowers and balsamics. On palate it is dry on entry. It is unctuous while keeping a good tension. On retronasal. Notes of balsamic, salts and chalk. It is long and well-balanced.
