The Nivarius soils are formed by a superficial layer of sand with a thickness of 30-50 cm over a subsoil of fragmented limestone, 2 metres deep, that was formed in the Cretaceous period. It is a basic soil (pH>8), with an excellent structure, porosity and drainage, considered in Burgundy and other prestigious winegrowing areas as the perfect soil for the production of great wines.
Mediterranean with Atlantic influence.
Our vineyards are located at an altitude of 800 metres, north-facing at the municipalities of Albelda de Iregua y Nalda. This situation helps us to keep the tension and the freshness of the wines, as well as the natural acidity. That’s how we obtain the best white wines with ageing potential. Nivarius has been a pioneering at implementing cutting-edge technologies at the vineyards (conduction, analysis of the soil, etc.). The result is the maximum expression of the terroir with an excellent balance between factors such as minerality or acidity.
Viuras of more than 80 years old are selected, along with Maturana blanca at an altitude of 800 metres, north-facing. Manual harvest in boxes of 18 kg. Each variety is vinified individually in French oak casks of 3,500 litres, with ageing in lees in those casks for 9 months. Once bottled, the wine stays 20 months in bottle before release. Wine that will improve in bottle.
Clean and brilliant with a straw yellow colour and reflections of the same colour. On nose it is complex, elegant, of high intensity, dominated by notes of white fruit, balsamics and creamy oak. As it is oxygenated, it acquires more complexity with notes of minerals and bay leaf. On palate it is dry on entry, acidity perfectly integrated with its gliceride character when passing through the mouth. On retronasal, notes such as balsamic, citrus or floral start appearing with a saline final and a long aftertaste.
